Well, the Dormition Fast is coming up beginning this Friday. Goodbye lechoncito, Cuban sandwich, ropa vieja, flan, etc. I am convinced that Latinos suffer more from our Orthodox fasts because we use so many of the non-fasting ingredients in our food. We can do more with beef, pork, goat, lamb, chicken, cheese, milk, sugar, olives, and olive oil than almost any other culture.
We are more likely to be accused of being gluttons than ascetics. But, so was the Lord, so we are in good company. (Luke 7:34)

Being a cuban Orthodox myself, I can readily appreciate your plight. Let’s face it-when it comes to fasting, we Cubans just haven’t mastered the art of cooking for fasting seasons (at least, not for Orthodox standards), whhich is why I kinda go “Greco-Arab” when it comes to Lent and other fasting seasons. It is a bit of a torture going past a Cuban restaurant and bakery during Lent. Cuban sandwiches! Pan con lechon! Hay caray!!!
